A Roman Spritz

The classic Italian aperitivo, the Spritz, has become ubiquitous throughout the Italian peninsula. It's equally popular in other parts of the Mediterranean and now also on summer terraces in the United States.

Our favorite recipe:

Fill a large wine glass with ice cubes. Make sure the ice is cubed, not crushed, and fill the ice all the way up to the rim.

Slice a blood orange, cross-wise, about 1/8" thick, then in half again. Wedge the orange pieces in amongst the ice cubes.

Pour over the top:
1 part Aperol or Campari
4 parts prosecco
Splash of soda or sparkling water
